Wow, what a mouthful of a title, and even more importantly, what a mouthful of a dish. This was an experiment, an extension of a previous attempt at a different style of Hollandaise. I can hear centuries of French chefs rolling in their graves right now.

Slow Cooker Mexican Mole Chicken

This is an amazing dish from Mexico, mole is loosely translated as "sauce" so this is just "Chicken in sauce". This is a typical mole with cocoa and chili, so you can adjust the chili as you like to make it strong or weak. Mine is rather strong as I love chili. This is not the lowest of carbs, but is considered low carb, and compared to typical dishes its pretty good.

Pistachio Cranberry Biscotti

This one isn't as low carb as I would like, but its very hard to make anything with nuts/fruit that doesn't have carbs in it, at least there's plenty of fiber on offer. You can lower the carbs on this by omitting the cranberries, but the flavour is impacted considerably.

Crispy Pork Belly – (Siew Yuk 烧肉) with Garlic “Mash”

Pork Belly, those that know me know that even beyond bread, this is my holy grail. A perfectly prepared crispy pork belly will without a doubt gain my immediate attention in any restaurant, and it is extremely rare for me to not order it if available. Previously having been spoilt at so many restaurants I considered pork belly to be well beyond my reach skill wise, however with my new diet, I am willing to give it every go because I can dine on this as often as I like. So read on and enjoy. Remember, pork belly is extremely calorie dense, it is much like eating pure fat (it almost is) so go sparingly on your pork belly portions.

Spinach, Cauliflower and Blue Cheese Frittata

The Frittata is going to quickly become a breakfast staple for me while managing my weight. It is high in protein and with the appropriate vegetables it also delivers all the right nutrients making it a balanced meal. Naturally I wouldn't recommend living on these, balance comes from variety, but it is a complete package and should be enjoyed without guilt.

Pan Fried Wild Barramundi with Brocoli and Cauliflower Bake

Fish is fantastic for losing weight, in fact all protein is great for losing weight so any dish that is high in protein and insoluble fiber and low in readily accessible carbohydrates has to be a good thing. This dish ticks all the boxes - flavour, protein, fiber. Make sure you are on an exercise program with this one as it is high in kilojoule content from all the protein.

Quick Frittata

Whats the difference between a frittata and an omelette? Essentially the frittata has everything mixed in before cooking, while an omelette has the filling ingredients folded in later, either way this is a low carb and healthy (as long as you aren't cholesterol watching) meal.

A New Day

Well folks its been a fun ride these past couple of years, but the time has come. No, I won't be shutting the website down or stop cooking, but what I will be doing is changing my focus. I love food, I really do, to the point that unfortunately it has caught up with me in a rather negative way. So with the help of family, friends and co-workers I am having to go through a bit of a lifestyle change to "get healthy" and that includes a radical change to my diet.

Christmas Pizza

Pizza isn't common "Christmas" fare in most places, least of all my own, however this year I got a little sick of the usual kitchen dramas and instead wanted to focus on something a little simper that tastes great, but doesn't require much in the way of effort leaving more time for family and fun.


Moving can be a pain …

Moving house sure gets in the way of things, there will be more recipes to come soon one the whole move has settled down. In the meantime, here is a pic of the new "Proofing Cupboard", a little technology goes a long way when cooking. When closed, the equipment warms the cupboard nicely and creates an ideal proofing environment year round.
