Dough Forming: Small Roll Basics.

From the video, you "rotate" the dough on the spot using your hands, getting the initial action happening is the hardest part, once you get the ball spinning on the spot, you can steadily increase your speed until you are spinning it with your fingertips. This style of rolling is suited to smaller rolls, under 150g or so. Above this we move to a different style which uses the heel of the palm to do the work.
